In a mixing bowl, whisk together the flour, salt, and sugar. Cut the butter into cubes. After mixing the ingredients in the food processor a little, add water and run the food processor again.
When the mixture begins to resemble a dough, sprinkle flour on the counter and gently roll it into a ball using your hands. Wrap the dough tightly in plastic wrap and chill in the freezer for 45 minutes.
Take the pot on the stove, pour milk over it. Whisk the egg yolks well in a separate bowl. Slowly add the milk you have heated in the saucepan over the beaten eggs and continue mixing.
In a different pot, add water to the sugar and wait for the sugar to caramelize.
When the caramel turns brown, add heavy cream, the milk and egg yolk mixture. Put the caramel that you covered in a bowl filled with ice and wait for its consistency to thicken.
Peel and slice apples and pears. Squeeze lemon over it, add brown sugar, cinnamon, vanilla and nutmeg. You can use your hands to mix the ingredients better.
Preheat the oven to 400 degrees. Flour the counter and rolling pin to prevent the dough from sticking, and remove the dough from the freezer. If you have kept the dough in the refrigerator for more than 45 minutes, we recommend waiting 5-10 minutes before rolling it out.
