To get crispy potato chips, peel, wash and thinly slice the potatoes with a mandoline slicer.
Add the sliced potatoes to a bowl with the melted butter and sea salt. Then mix well to make sure each slice is completely saturated.
Line a baking tray or loaf pan with parchment paper and the potato slices carefully and evenly one by one.
Cover the top with parchment paper and bake it in the oven at 120 degrees for 3 hours. After 3 hours, remove potatoes from the oven and compress with any heavy object. Then place it in the refrigerator to rest for 12 hours.
After 12 hours, take it out of the baking tray or loaf pan and cut it into 2 cm slices.
Heat vegetable oil or sunflower oil to 325˚F and add the potatoes to the pan, deep frying for 3-5 minutes until golden brown.
Remove from the pan and place on a service plate. Sprinkle salt on it. You can also decorate it with parmesan cheese, parsley and basil if you wish. Enjoy!
