Add all the dough ingredients, except butter, to the bowl of your stand mixer. Knead on low speed for 10 minutes until the dough comes together. Slowly add the butter, one cube at a time. Once all the butter is added, knead for 10-20 more minutes at low-medium speed until the dough has a smooth surface and pulls away from the sides of the bowl.
Place the dough in a lightly oiled bowl and proof at 28°C / 80°F in the folding proofer for 60-90 minutes or until doubled in size.
Divide the dough into 9 equal pieces and roll them into balls. Cover, and rest for 10 minutes. Use your hands to shape the rounds into logs that are thicker on one end.
With a rolling pin, roll the logs into long water-drop-shaped discs. Roll from the thicker end and down for a croissant-like shape.
Arrange in a 9x9-inch pan and proof at 28°C / 80°F in the folding proofer for 30 minutes.
Brush the rolls with egg wash and bake at 180°C / 350°F for 15-20 minutes, until golden brown.
