Lasagna consists of bechamel, ragu, parmesan cheese and pasta dough cut into long strips. Lasagna is a famous Italian dish. The history of this dish, which is as satisfying as it is delicious, dates back to ancient times.
The first lasagna recipe was found in the English cookbook in 1390. The word lasagna is actually the name of the cookware, but over the years, lasagna has only been called a dish. Lasagna can be eaten not only with the minced meat sauce, which the Italians call ragu, but also by making different versions. Vegetarian, chicken or vegetable versions are also very popular.
In this recipe, we wanted to please not only the classic lasagna lovers, but also our vegetarian followers. We prepared a healthy and satisfying vegetable mortar between lasagna slices.
Lasagna is baked in the oven by lining up in layers. Lastly, it is served by adding parmesan to it. Starting from the bottom, the layers are bechamel, macaroni, ragu, béchamel sauce and macaroni. We start by peeling the onions and garlic. Then finely chop them. Every dish with these two is a store of taste and health. We chose to use 2 onions and 7 cloves of garlic in this recipe. But you can reduce or increase the amount according to the flavor you want, it all depends on your taste.
First of all, since it is a vegetarian recipe, it will contain vegetables. But the vegetables you add to it are completely up to you. There are other vegetables to be added next. Chop mushrooms, celery, carrots and spinach as in the picture.
The lasagna will be cooked in the oven, but first of all, it is necessary to cook this vegetable mixture. For this reason, add the oil to the pan first, and then add the chopped onions after the oil has melted. Here we will follow the cooking order of the vegetables. You can add carrots and celery to the onions fried in oil.
While continuing to fry, add the garlic and mushrooms. Then add the spice mix and 1 tablespoon of tomato paste. Mix them all evenly.
Add 1 cup of water and spinach to the mixture. Cover the pan to let it cook in its own steam.
Melt the butter in a separate pan. Add flour and mix well to avoid lumps. Then add milk and sage. Continue cooking the béchamel sauce on low heat.
Place the pasta slices on the tray. After laying the first layer, add the vegetable mixture and pour the bechamel sauce over the mixture. You can sprinkle finely chopped parsley on the béchamel sauce. The original recipe is prepared with parmesan cheese, you can add cheddar or parmesan on the slice.
Then follow the same steps for the second layer. This time you can add a little more bechamel sauce and cheddar cheese.
You can bake in the oven at 200°C /390°F for 20 minutes. When serving, you can sprinkle parsley and red pepper powder on it.
