Beat two eggs at room temperature with sugar and a pinch of salt with a whisk until the sugar dissolves and the eggs become frothy. This is the secret of the crust on the brownie!

Lay parchment paper on a baking pan, pour your mortar in it. Make sure that the thickness of the mortar is 2 fingers. Drizzle the remaining melted milk chocolate over it. Keep it on the counter. In the meantime, set the oven to 355°F, so that a film layer forms on the brownie while it is waiting, so that it crusts well while baking in the oven.
Bake it at 355°F for exactly 22 minutes, no less, no more! Take it out of the oven and wait, when it is ready to hold it by hand, put it in the freezer, it will stay there for half an hour. Take it out of the freezer and put it in the refrigerator to rest for 1 hour. Slice it well after you get it's consistency.
