Cut the eggplants in half with a knife. Then cut the two half eggplants crisscrossed with a knife.
In a bowl add your brown rice miso, olive oil, honey, soy sauce, rice vinegar and sesame oil. Mix until well combined.
This next step is optional - To add flavor and fragrance we added 1/2 tsp of garlic Salt, pepper, turmeric, cumin, salt and paprika.
Using a pastry brush or even your hands, coat the inside of the eggplant half with your marinade ensuring the mixture goes into the crisscrossed leaving a little leftover.
Place the eggplants with parchment paper and air fry at 400 °F for 8 minutes.
Air fry at 400 °F for another 8 minutes by using leftover marinade. Re-apply it on the eggplant.
You can consume it with rice or just eat it on its own for lunch!
